After a few nights of stir fry, I wanted to go back to something I was familiar with – a hunk of salmon.  Thats not the most descriptive word, but its a good name for it.

A sheet of foil, and a spray of cooking oil on it.  Ultimately that spray really helped.  The salmon on it, a little bit of brown sugar on the top (didn’t taste it), some liquid smoke (was very good), and a little bit of thyme (also good).  Oven at 400 for 40 minutes.  The foil wasn’t quite closed up – let it dry out a little bit (but not too much).

While that was cooking, I chopped up a potato some onions, a bit of yellow bell pepper.  Little bit of oil in a skillet and put the potatoes in there.  Let them get to sizzling, tossed some salt into it (not much, but very good).    Then I tossed in the peppers and onions until it felt right.

Once that was cooked pulled it off, tossed it on a plate and had about 10 minutes before the salmon was done.

Right portions, good food, and they mixed well together.
